Lasagna Soup Recipe

1 lb. mild bulk sausage

2 cups chopped onion

1 cup diced carrots

2 cups sliced mushrooms

2 tbls minced garlic

4 cups chicken broth

2 14oz cans stewed Italian tomatoes with juice

1 cup teeny lasagna noodles

2 cups fresh chopped kale (can use spinach)

2 cups cubed Provolone cheese (we used pepperjack cheese)

1/4 cup freshly shredded Parmesan cheese

Fresh Basil thinly sliced for garnish

Brown sausage, add onions and carrots, mushrooms, saute' 3 minutes. Add broth, stewed tomatoes and kale and bring to a boil. Drop in pasta simmer for 10-12 minutes until cooked. If using spinach add at the end until wilted. Add provolone cheese cubes to the bottom of your bowl, add soup, garnish with basil and parmesan cheese. Serve immediately. Enjoy ~
