Cheeseburger Soup
3/4 pound ground beef
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 tsp basil
1 tsp parsley flakes
4 tbls butter
3 cups chicken broth
4 cups diced frozen hashbrowns
8 oz American cheese or Velveeta (1 1/2 cups)
1 can nacho cheese soup
1 1/2 cups milk
3/4 tsp salt -- 1/4 tsp pepper
1/4 cup sour cream
Brown beef. Set aside. Saute celery, onions, carrots, basil and parsley in 4 tbls butter (about 10 min). Add broth, potatoes and beef, bring to a boil. Reduce heat, cover and simmer 10-12 minutes.
Add cheese, milk, soup, salt and pepper. Cook and stir until hot.
Remove from heat and blend in sour cream. (8 servings)
Serve with dill pickle slices.
