Chunky Apple Cake

1/2 cup butter, melted

2 cups sugar

2 eggs

1 tsp vanilla

2 cups flour

1 tsp baking soda

1 tsp salt

2 tsp cinnamon

4 Granny Smith apples

1 cup walnuts, chopped (or pecans)

Preheat oven to 350F.

Cream butter, sugar, eggs, and vanilla until blended.  Combine flour, baking soda, salt and cinnamon.  Add to creamed mixture.  Stir in apples and nuts.  Spread in a greased 8X13 pan. 

Bake at 350F for 45 minutes or until toothpick inserted in center comes out clean.  Coolin pan.  Top with cream cheese frosting.  Store in refrigerator.  

Cream Cheese Frosting

1 8oz. pkg cream cheese, softened

3 tbsp butter, softened

1 1/2 cups powdered sugar

1/8 tsp salt

1 tsp vanilla

Mix cream cheese and butter together at medium speeed until creamy.  Gradually add sugar and salt, beating until blended.  Stir in vanilla.
