Fill quart jars 3/4 full with chunks of raw fish (Sunnies, Crappies or Northern). Add 1 3/4 cups white vineger, 3/4 cup sugar, 1 tbsp pickling spice, 1 sliced onion and 2 tbsp pickling salt.
Store in refrigerator. Shake well every day for a week. It is then ready. Will keep in refrigerator for 4 to 6 weeks.
